Paisa food is hearty: bandeja paisa (beans, rice, plantain, chicharrón, chorizo, egg, avocado, arepa) is the signature dish. Arepas, empanadas, and buñuelos are everywhere and cheap.

Street fruit (mango biche with salt and lime, mamoncillos, guanábana) is generally safe. Jugos naturales are a national obsession, in water or milk, with dozens of fruits you've never heard of (lulo, curuba, tomate de árbol).

Be a bit more careful with raw seafood (ceviche) outside of well-reviewed spots, and with street meat that's been sitting. Sealed bakery items and anything fried fresh in front of you is fine.

Must-try: chicharrón, sancocho, arepa de chócolo con quesito, obleas, and a tinto (small black coffee) from a street thermos for ~$1,000 COP.
